One Sunday...Forty Meals Part Du


K...so keeping on with good freezer meal recipes...

Pulled Pork


This is the second pulled pork recipe that I have tried and so far, it may be the winner. I have one more up my sleeve that I want to try so I’ll keep you posted!


Ingredients
1 medium onion, chopped
1/2 cup ketchup
1/3 cup cider vinegar
1/4 cup packed brown sugar
1/4 cup tomato paste
2 tablespoon sweet paprika
2 tablespoon Worcestershire sauce
2 tablespoon yellow mustard
1 1/2 teaspoon salt
1 1/4 teaspoon ground black pepper
4 pound boneless pork shoulder blade roast (fresh pork butt), cut into 4 pieces


Directions
In 4 1/2- to 6-quart slow-cooker pot, stir onion, ketchup, vinegar, brown sugar, tomato paste, paprika, Worcestershire, mustard, salt, and pepper until combined. Add pork to sauce mixture and turn to coat well with sauce.
Cover slow cooker with lid and cook pork mixture on low setting as manufacturer directs, 8 to 10 hours or until pork is very tender.
With tongs, transfer pork to large bowl. Turn setting on slow cooker to high; cover and heat sauce to boiling to thicken and reduce slightly.
While sauce boils, with 2 forks, pull pork into shreds. Return shredded pork to slow cooker and toss with sauce to combine. Cover slow cooker and heat through on high setting if necessary.
Spoon pork mixture onto bottom of sandwich buns; replace tops of buns. Serve sandwiches with pickles, potato chips, and hot sauce if you like.

These next few recipes are new and I can’t wait to give them a try! Super simple…sure hope they are tasty too ;)

Teriyaki Chicken

Ingredients
One large onion cut into chunks
2 large cans of pineapple (undrained)
4 Garlic Cloves
4 Chicken breasts
1 cup teriyaki sauce

Directions
Mix together sauce. Separate into portions, lay flat and freeze. Add ¼ cup sauce to crock pot, Cook on low 6-7 hours. Serve over hot rice. 

*Alternately, I think you could do this in a casserole dish, in a 350 degree oven for one hour.

Savory Chicken

Ingredients
4-6 chicken breasts (we used thighs and pork chops)
2 cans stewed tomato's
4 tbs white wine
1 large onion
1 cup chicken broth
salt and pepper to taste
4 cups broccoli (added while cooking)

Directions
Mix together sauce. Separate into portions, lay flat and freeze. Cook in crock pot on low for 6-7 hrs. Add broccoli during last 30 mins.

*Alternately, I think you could do this in a casserole dish, in a 350 degree oven for one hour.

Mediterranean Chicken & Pork

Ingredients
1/4 cup olive oil
2 cups chick broth
4 cloves of garlic
2 tbsp paprika
2 tbsp poultry seasoning
2 tsp dried oregano
2 tsp dried basil
6-8 thick cut pork chops

Directions 
Split all ingredients into two bags.  Cook on low for 8 hours.  Serve with salad and rice or noodles.

*Alternately, I think you could do this in a casserole dish, in a 350 degree oven for one hour.

Steak and Peppers

This one was an improvised for sure. We had found a great recipe but in the process of getting to this one, ended up using the last of the soy sauce. 

We had already talked sweet to Weebo once and asked him to go to the grocery store (we ran out of onions) so we had to switch it up.

We used a homemade BBQ sauce instead.

Directions
Cut the steak in thin slices (cut across the grain). Split into bags, zip and seal.


And that's that!

We learned a few things along the way this first time round. The big one was doing more prep the day/night before. (Like cutting all the veg…that in itself would have been a huge time saver and probably not pooped us out so much on the Sunday.) Overall, it was a huge success and will make dinner decisions a lot easier for the next few weeks.
