Last night I lay curled in the fetal position in bed, my husband
glued to one side of me and puppy on the other, shivering with a bone rattling
chill...trying in vain to suck the heat out of them both and drift off to sleep. About ten minutes
into this, with both of my boys breathing deeply and just about asleep, a “shit” comes
out of my mouth.
“What?” husband says groggily.
“I forgot to blog…damn.”
“Don’t worry, you can do it tomorrow.”
For the next ten minutes, all I could think about was all
the reasons that I COULDN'T do it tomorrow….mainly, that this meant that I had failed twice this month to do a blog-a-day. Boo me!
Booooooooo!
Not that I really had a "real" highlight to my day. I guess that I could have posted a picture of my handsome dog. Or my even handsomer hubby. Or a picture
of my dinner, which turned out to be tortilla chips and salsa.
But, although I love all of those things (mmmm...salsa...) that's kinda predictable and we still have a lot of days left to post those kind of "back pocket" pictures.

I could have snapped a picture of sheet music at choir or of
the temperature gauge in my truck that
was only reading -14 and barely deserved the nasty chill that I had.

bed after half an hour….threw on bright orange soccer socks pulled up to my
knees and an over sized blue long sleeved shirt that went fabulously with my
pink polka dot jammie pants…
But I didn’t. Boo me!
I will try today to get a good one for you…stay tuned and I
will get my highlight captured in Iphone history.
For now, I will leave you with the recipe I promised. The gooey,
sweet fall off the bone slow cooker ribs that we had Sunday for dinner. Try them….YOU
MUST!
Sweet and Sour
Ribs
Brown Sugar Glaze:
2 cups Brown Sugar
¼ cup All-Purpose Flour
1/3 cup water
½ cup white vinegar (apple cider vinegar is a great
substitution here!)
2 tbsp soy sauce
2 tbp Ketchup
¼ tsp ground ginger
¼ tsp garlic power
3 lbs Pork side ribs, cut into 2 or 3 sections.
Directions:
Mix brown sugar and flour in a saucepan. Add the water. Stir. Add next five ingredients. Heat and stir until boiling and thickened.

Layer ribs in a 5 quart slow cooker, spooning sauce over
each layer. Cover. Cook on low for 10-12 hours or on high for 5-6 hours until
ribs are tender.
Serves 6…unless you are me and mine…in which in that case…it
serves two!
Serve with rice and steamed vegetables... or fries ;)
